The experience

The Guest offers a multi-course Chef's Tasting Menu inspired by worldly-experiences and the flavors and moods of the concurrent seasons. Led by Chef Brian De Souza, coupled with beverage pairings by Beverage Director, Bruce Martin Polack, and topped with the hospitality of Syd Younggreen.

You can expect a dining experience of about 3 hours and over 12 courses. The menu is complemented by carefully curated beverage pairing selections of an eclectic mix of unique spirits, wines, and non-alcoholic options.

  • We can always accommodate:
    Gluten-free, nut allergies, shellfish allergies, & pregnancy restrictions
    Depending on the menu, we may be able to accommodate:
    Pescatarian, vegetarian
    Rarely can we accommodate:
    Vegan, dairy-free (if diner eats butter, it is easier to accommodate)
    We do not accommodate:
    Preferences, only true allergies and medical restrictions. The experience is designed to take you on a journey and push you outside of your culinary comfort zone. We’re grateful for your trust to do so.

  • Because this is a Chef’s tasting menu, all courses are a surprise to the guests. You can view a sample past menu here.

  • You and your guests are welcome to add these pairings to your experience once you arrive or select from our a la carte menu of wines by the bottle, wines by the glass, or cocktails.

  • Most guests use this as an opportunity to dress up. Ultimately, we want our guests to feel comfortable and do not have a strict dress code. Please come as you wish.

  • The Guest is located in a permanent establishment. The “secret” location details will be sent to you prior to your reservation time.

  • The Guest is meant to be a “hidden gem”. The address will be provided upon booking. We are located in the heart of LoDo, Denver.

  • We are conveniently located adjacent to the Larimer Square parking garage on Market St. You are also welcome to utilize the valet service on 15th Street outside of Ocean Prime.

  • A reservation within our dining room is $225/person. “On the Pass” and Chef’s Table bookings are available for $295/person. Beverage pairings will be an additional cost. Additional details can be found through our OpenTable bookings.
